Using Ingredients

I head out of town relatively often (1 to 2 times a month), and obviously I like to cook. This becomes a problem when I shouldn’t go grocery shopping because I’m heading out of town, but I only have limited ingredients. Talk about a headache.

If you follow my blog, you see I made a yummy sausage soup recently but I didn’t use all my sausage, and I didn’t freeze the leftovers sooooo I have to use it.

Last night I craved a quick pasta dish that I could put together quickly (30 minutes) and would be a good meal for 1 and this is what I used:

-1 cup of pasta
-1 tablespoon of olive oil
-one sausage
-2-3 tablespoons chopped onion
-1 clove of garlic, minced
-1 cup of chicken broth
-1/4 cup of milk
-salt and pepper to taste
-2-3 tablespoons of grated parmesan cheese
-2 cups of spinach

Here’s what I did:

-Cook the pasta to just about done (if it usually needs 10 minutes, cook it for 6-7) and set aside
-put olive oil in pan
-add garlic, onions, and sausage and cook until brown (3-5 minutes)
-salt/pepper to taste
-add chicken broth, milk, and pasta
-bring to a boil
-cover and simmer for 3-5 minutes
-add cheese and stir constantly (the sauce should thicken slightly)
-remove from heat and stir in spinach until wilted
-poor a glass of wine and enjoy!
