More zoodles. I know.
I bought some more, but for some reason I have such a hard time eating zoodles with pasta sauce like it’s actually spaghetti. I cannot get my mind to stray away from thinking, “I’m eating veggies covered in sauce.” Seems weird.
However, I don’t have any issue with preparing them like Chinese Lo Mein and eating them. No problem at all.
Really simple. Roast the zoodles like I’ve mentioned in this previous post.
While they’re roasting pan fry a chicken breast. Here’s an easy tutorial on how to do that if you don’t feel comfortable cooking meat, it can be intimidating!
- Cut up the chicken and set aside
- in the same pan, throw in frozen veggies (I used peas, carrots, and broccoli)
- 1 tablespoon of soy sauce
- 1 tablespoon rice vinegar
- 1 teaspoon sesame oil
Once everything is heated through add the zoodles, chicken and season with salt/pepper/any other spices you’d like.
Then, remove from heat and enjoy! Super easy, and trust me – DELICIOUS.
