Mix and Match

It’s that time again – when you’re running low on ingredients you have to get creative. Earlier this week, I found myself left with one chicken breast and some frozen broccoli so my only choice was to use seasonings to make this the best chicken and broccoli dish ever.

Here’s what I did:

Marinade

  • White vinegar
  • Whole ground mustard
  • Salt
  • Pepper
  • Cayenne Pepper
  • Garlic
  • Brown sugar

Let you chicken marinade in this mixture for as little as 30 minutes or as long as 8 hours.

Then, cook your chicken on the stove. If you’re not sure how to do so, I link to a really simple strategy here.

Put your frozen broccoli into the same pan when the chicken is almost done and add a little olive oil. You can also season it with some salt, pepper, and garlic powder. The leftover marinade from the chicken will also season the broccoli to perfection. When it’s all cooked through, cut up the chicken, put it all in a bowl and enjoy this sweet, sour, and spicy dish!
