Hola everyone, I’ve been slacking. Between an exhausting “vacation” in Las Vegas and starting a new job, I’ve been so tired!
But, I had to start cooking again and here is where I started…a delicious, comfort meal!
- 1 large chicken breast
- 1/2 cup red onion, diced
- 1 tsp paprika
- salt & pepper
- 2 Tbsp vegan butter (or whatever kind you like, we just always have this because my roommate is vegan)
- 1 Tbsp fresh thyme leaves
- 3 large garlic cloves, minced
- 1/2 cup – 1 cup low sodium chicken broth
- 1 large handful of spinach
First prep your chicken breast with salt, pepper, and paprika. Make sure to rub it all over.
Then, melt a Tbsp of butter over medium-high heat, and add the chicken breast. Let cook on each side for about 3 minutes and then add the rest of the butter, along with the onions, thyme, and garlic. Lower the heat to medium.
Let this cook for a few minutes, until the garlic and thyme are super fragrant and the onions start to be transparent. Then add in 1/2 cup of the chicken broth and cook for 10 minutes, stirring often. The broth may reduce with the heat, so add a little more if you feel like you need it.
Check the chicken for doneness and once it’s done, lower the heat and add the spinach. Make sure it’s wilted all the way and it’s ready to eat over a nice bowl of rice, some arugula, or anything else you want to try.
